The Date on Your Egg Carton May Not Mean What You Think — Here’s What Those Codes Really Tell You

You open the refrigerator, reach for a carton of eggs, and suddenly hesitate when you notice several numbers printed across the side. One may say “Best By,” another may begin with the letter “P,” and somewhere nearby there may be a mysterious three-digit number. For many shoppers, those markings look like expiration warnings, but they do not all mean the same thing. On many U.S. egg cartons, the three-digit number is actually the pack date, showing the day of the year the eggs were processed and placed into the carton. The system runs from 001 through 365, with 001 representing January 1. For example, 032 represents February 1, while 198 corresponds to July 17 in a non-leap year. Understanding that small code can make grocery shopping and refrigerator organization much easier.

The letter-and-number markings can reveal other information as well. A code beginning with “P” generally identifies the processing or grading plant, while labels such as “Sell By,” “Best By,” and “Best Before” serve different purposes. A sell-by date mainly helps stores manage inventory, while a best-by date usually relates more closely to expected quality. That means reaching the printed date does not automatically tell you whether an egg has suddenly become unsafe. The three-digit pack code can help you compare two cartons or decide which eggs to use first, but it should never replace proper storage and food-safety habits. And that is where the detail many shoppers overlook becomes far more important than the date itself.
