Why Dark Rings Sometimes Appear Inside Potatoes

Cutting open a potato and discovering a dark ring or black patch inside can be surprising, especially when the outside looks perfectly normal. Many people immediately assume the potato has spoiled or become unsafe to eat. Because the discoloration appears suddenly and without warning, it often creates concern about freshness and food safety before the cause is fully understood.

In many cases, however, these dark areas are linked to internal bruising or a condition commonly known as internal black spot. Potatoes may appear durable on the outside, but the inner flesh is sensitive to pressure and impact during harvesting, transport, or storage. Dropping, stacking, or rough handling can damage internal tissues without leaving visible marks on the skin. Over time, those bruised areas may darken into gray, black, or purplish rings that only become visible once the potato is sliced open.

Storage conditions can also influence how potatoes look internally. Potatoes stored in environments that are too cold, poorly ventilated, or exposed to temperature fluctuations may experience changes in their internal structure. In some situations, reduced airflow and stress inside the potato can cause sections of the center to darken, a condition sometimes referred to as “blackheart.” Mild cases often appear as rings or isolated dark patches rather than complete spoilage throughout the potato.

Fortunately, potatoes with small internal dark spots are usually still safe to eat if they remain firm, smell normal, and show no signs of mold, slime, or extensive decay. The affected portions can simply be trimmed away before cooking. Potatoes should only be discarded if they become soft, heavily discolored, foul-smelling, or green throughout. In most situations, the dark ring is simply a cosmetic issue caused by stress or storage conditions rather than a sign of dangerous spoilage.
