That Mysterious Three-Digit Number on Your Egg Carton May Not Mean What You Think Today

The three-digit pack date isn’t the same as an expiration date. A code beginning with “P” generally identifies the plant where the eggs were processed, while “Sell By” and “Best By” markings serve different retail or quality purposes.

Properly refrigerated raw shell eggs can generally be kept for around three to five weeks. Keeping them in their original carton on an interior refrigerator shelf helps maintain a more consistent temperature.

The popular water-float test can provide clues about an egg’s age because its air cell becomes larger over time. However, it cannot determine whether an egg contains harmful bacteria such as Salmonella. Avoid cracked eggs, practice good kitchen hygiene, and cook eggs appropriately.

So the next time you notice that mysterious three-digit number, don’t automatically assume it’s an expiration date. It may simply tell you when the eggs were packed. Use the dates to help manage freshness, but remember that safe refrigeration, careful handling, avoiding damaged eggs, and proper cooking remain the most important food-safety habits.
